Frequently Asked Questions

The most common questions from food safety leaders about the 2027 updates — answered by the experts who wrote the standards.

The food industry continues to evolve as global regulations, customer expectations, and recognized best practices become more complex. This shift created the need to refresh the AIB International Consolidated Standards for Inspection, ensuring they remain relevant, practical, and aligned with the current realities of food safety management across different types of facilities and regions.

The standard was updated to reflect current regulations, industry’s best practices, and operational realities. Changes fall into six areas:

  • Clarity — clearer wording and reduced ambiguity.
  • Rewording — revised requirements to better align with current expectations.
  • Expanded — broader scope or added criteria were needed.
  • Reorganized — improved flow and usability.
  • Terminology — updated terms and glossary support.
  • New Requirements — additions to address new regulations, technology or changes in norms that that impacted food safety

Core GMP expectations remain consistent, while the standards are clearer and easier to use.

For more details on the updates, download the change document available on our website.

We have included new criteria for Electronically Monitored IPM devices as well as for the use of alternative pest detection methods

One of the more important updates is how we've refined the risk assessment definitions. The four levels themselves haven't changed (Minor Issues Noted, Improvement Needed, Serious, and Unsatisfactory) but we've sharpened the language in each so it's clearer when and why a finding lands at a given level.

Additional details are available in the change document on our website.

Transition & Timing

  • Under the requirement 1.37 Pasteurization, we have added criteria for aseptic processing.
  • Aware of trends of using Bluetooth and Wi-Fi enabled devices, we have included 4.16 Electronically • Monitored IPM Devices to make sure that IPM program is working as designed.
  • With the use of scent-detection dogs (canines) as alternative pest detection measures, we have included a new requirement (4.17 Alternative Pest Detection).

To better understand these new requirements, please refer to the change document available on our website.

Start by reviewing the change document to understand which updates apply to your facility. Then assess your current programs against the new or revised requirements, identify any gaps, and update procedures, records, responsibilities, and training as needed. Implementation should be based on your facility’s risk, operations, and the standard that applies to your site.

The key terminology change is in the requirement 5.23, where HARPC has been updated to Preventive Controls for Human/Animal Food (PCHF/PCAF) to align with recognized terminology.

Requirement Changes

There’s an important change coming in 2028:

Severity Addition in 2028 for Repeat Findings - A repeat finding based on the 4-digit standard requirement from the most recent scored inspection will trigger an addition of with Severity. The finding is not required to be an exact repeat of the previously identified finding."

No, there’s no change in the inspection duration
